Dandelions everywhere

I don’t know about you, but my yard stays looking like a sea of yellow and purple most of the spring. This year has been no exception. Seems like a waste not to take advantage of them, so I decided to make some dandelion jelly. There are several recipes available via a quick google search, but they are all pretty similar.

I used:
2 cups dandelion blossoms (yellow only)
2 cups hot water
4 cups sugar
1 packet sure gel
1/4 c lemon juice

Rinse blossoms, place in a jar with the 2 cups of hot water. Let sit in the sun a couple hours.

Strain “tea” after it’s had time to steep. Be sure and squeeze all the petals to get as much juice as you can.

Bring tea to a boil, and follow direction on the sure gel package. I, personally, have had trouble getting mine to set up enough, so I typically will let mine boil a little longer than the directions say.

Place into hot jars, seal, and boil water process for 10mins. The end result? Beautiful honey colored dandelion jelly from the front yard šŸ™‚
